I know I've seen the de Camp cover in the past and chuckled at it, but man, thinking about it now I just realized that if someone didn't know it was real they'd think it was a parody of a bad SF cover.

Gregory Benford's Galactic Centre novels end up being about a millennia-spanning war between humans (later, possibly a successor species) and machine entities, all done with STL travel.

Kevin O'Donnell Jr.'s Mayflies features an STL colony ship that turns into a much-STL generation ship due to an in-flight mishap, but I believe FTL is invented later, and the folks responsible, in an excessively convenient act of magnanimity, declare they'll leave the MSTL ship and its implausible target star alone.
