The stereotypical job list for kids in artistocratic families is that the first son is the heir, the second son joins the military and the third son joins the church. I'm not that clear on what happened to sons four and up.
In a fantasy world, should that go heir, soldier, mage? Yes, a lot of third sons won't be particularly adept at the trade but I expect a lot of third sons made lousy clergy.
