That is a cool looking place, it had better be interesting looking and fun, without being too "in your face", if I step in and had better have terrific food. There are plenty of places that have an interesting look but can't deliver on the food.

I've seen this a lot in local mid tier/trendy places. Possibly current fads in restaurant management concentrating on the front of house/dining experience, while leaving actual food production to fend for itself?

Which is odd, given that the "rock star" in this industry tend to be the chef, not the maitre d'.

If I'm reading the news articles and websites correctly, this is the third of four restaurants in downtown Waterloo managed by executive chef Nick Benninger, and Marbles has had two head chefs in a year (Kevin Bottrill from last February, but who now seems to have maybe gone to the Easy Pour Wine Bar in Cambridge, and now Dean Baker, according to Marbles website).

This could help explain hiccups in operation and timing in the kitchen, perhaps?

I used to go to this restaurant regularly since the early 90s - it was fantastic and the food was always terrific, and the service was stellar. Several years ago we moved to the other end of town and now seldom get there.... The last time I was there was just before Christmas and I didn't notice any problem with the food. I did notice the new decor and the addition of a television screen. The decor is lovely. The television - not so much.
